Recipe of the Month: Slow Cooker BBQ Pulled Chicken Sandwiches

Serves 4

This is the kind of meal that’s perfect for summer nights when you don’t want to turn on the oven. It’s simple, hands-off and easy to pull together ahead of time. We love serving it on buns with simple sides like corn on the cob, sweet potato fries and pickles. 

Here’s what you need:

  • 1½ pounds boneless, skinless chicken (I like to use a mix of breasts and thighs)
  • ½ cup low or no-sugar-added BBQ sauce
  • ½ cup ketchup
  • 1 teaspoon Dijon mustard
  • ½ Tablespoon Worcestershire sauce
  • ½ Tablespoon apple cider vinegar
  • ¼ cup water  
  • 1 teaspoon cumin
  • For serving: hamburger buns (I like to use slider buns)

Here’s what you do:

  1. Add BBQ sauce, ketchup, Dijon mustard, Worcestershire sauce, apple cider vinegar, water and cumin to the slow cooker. Stir to combine.
  2. Add the chicken and turn it over to coat both sides with sauce.
  3. Cook on low for 6-7 hours or on high for about 3 hours.
  4. Once cooked, using 2 forks, shred the chicken directly in the slow cooker. Stir to cover with the sauce.
  5. Keep the meat in the slow cooker on warm until ready to eat. Serve on buns.
